Apple Cinnamon Muffins
If you're anything like me, you love a good apple pie (especially with ice cream). Sadly, it's not typically to be able to enjoy apple pie for breakfast or as a morning snack. These easy one-bowl muffins take 5 minutes to put together and will leave your kitchen smelling like you just baked a pie! They are perfect for a morning snack or as a snack when you're on the go!
1 cup unsweetened apple sauce
1/3 cup vegetable oil
1 cup rolled oats
1 cup all-purpose flour
1 tsp baking powder
1 tsp cinnamon
Preheat oven to 350F and line or grease a muffin tin. In a medium-sized bowl, mix the applesauce and oil together with a whisk.
Add the remaining ingredients, sprinkling the baking powder around. Mix with a whisk or wooden spoon until combined.
Spoon out equal portions into the muffin tin and bake the muffins for 20-25 minutes, or until the centre comes out clean.
