Book Bakes: Miss Stacy's Baked Macaroni

Welcome to the first edition of Book Bakes, a series where I go through recipes from books or cookbooks based on books and test out various yummy recipes.
To start off, I made Miss Stacy's Baked Macaroni from The Anne of Green Gables Cookbook. It is an easy meal that can be easily doubled to serve more (or yourself because it's pretty yummy!).
1 tbsp butter, plus more for greasing
1 cup elbow macaroni
1 tbsp all-purpose flour
1 cup milk (I used 1%)
1 cup grated cheddar cheese, divided into 3/4 cup and 1/4 cup
1/2 tsp salt
black better, to taste
1/4 tsp paprika
Preheat the oven to 350F. Grease a small casserole dish with butter. Bring a medium saucepan of salted water to a boil. Add the macaroni noodles and cook until tender. Drain the noodles in a colander and rinse under cold water. Set aside.
In a different medium saucepan, melt the butter over medium heat, and then add the flour. When the flour is well mixed in, add the milk.
Add 3/4 cup of the grated cheese and cook and stir until the cheese melts. Stir in the salt, black pepper, and paprika. Remove from the heat.
Add the cooked noodles to the greased casserole dish and mix in the cheese sauce.
Top with the remaining 1/4 cup of cheese and bake for 20-30 minutes or until bubbly. Enjoy!
