Basic Banana Muffins
During this pandemic, I have re-kindled my love with baking. One recipe that I have been fairly unfamiliar with is making muffins. I found a great recipe that I am also sharing with my students because it is an easy recipe that makes delicious (and perfect) muffins perfect for breakfast or a delicious snack.
1 1/2 all-purpose flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
3 medium ripe bananas
1 large egg, room temperature
1/3 cup vegetable oil
1 tsp vanilla extract
Optional: chocolate chips
Preheat the oven to 375F and prepare a muffin pan by placing muffin liner cups. In a large bowl, combine flour, sugar, baking soda, and salt.
In a medium bowl, mash the bananas. Add egg, oil, and vanilla and mix well.
Combine the wet ingredients into the dry until combined. Add in chocolate chips if desired. In this batch, I made half with and half without!
Fill muffin liner cups halfway and bake for 18-22 minutes or until a toothpick comes out clean. Let cool and enjoy!
