Tone It Up's Blondie Muffins
An updated version on a favourite healthier snack of mine from the ladies of Tone It Up. It is flourless and something you can put together in under 30 minutes!
Here's how you can make your own Blondie Muffins.
1 15 oz. can chickpeas, drained and rinsed
1⁄2 cup nut butter (I used powdered peanut butter which is a bit healthier and great for baking!)
1⁄4 cup maple syrup
2 tsp vanilla
1⁄2 tsp salt
1⁄4 tsp baking powder
1⁄4 tsp baking soda
Preheat oven to 350 degrees. Spray a muffin tin with coconut oil spray (or oil with a paper towel).
Combine all ingredients in a food processor or a blender.
Pour batter into the muffin tins and bake for 18-20 minutes or until a toothpick comes out clean.
