Butternut Squash Chilli

Chilli is something that I've started to enjoy more as I've gotten older. The trick for me has been finding that combination of ingredients that helps me enjoy every spoonful. Today I'm sharing a recipe that is healthy, delicious, and super easy to make!


  • 1⁄2 yellow onion, diced

  • 2 garlic cloves, diced

  • 1 tsp olive oil

  • 1 lb ground turkey or chicken

  • 1 cup water or vegetable broth

  • 2 cups butternut squash, cubed (can use frozen, just thaw first)

  • 1 14.5 oz. can diced tomatoes or 1 tomato, diced

  • 1 Tbsp chilli powder

  • 2 tsp garlic powder

  • 1 tsp cumin

  • 1⁄2 tsp salt

  • cilantro garnish (optional)


In a large pot over medium heat, add olive oil, onion, and garlic. Sauté for 3 minutes.

Add meat and break up into pieces inside the pot. Cook until all sides are browned, about 15 minutes.

Add remaining ingredients. Raise to a boil then reduce to a simmer. Cook for 30 minutes.
