Cadbury Mini Egg Cookies

These cookies are easy to put together and the Cadbury eggs are an easy way to add in a colourful twist for the holiday.


  • 2 1/4 cups flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 cup unsalted butter, softened

  • 3/4 cups white sugar

  • 3/4 cups brown sugar

  • 2 tsp vanilla

  • 2 eggs

  • 1 1/2 cups Cadbury Mini Eggs (approximately 1.5 of the 200g bags)


Preheat the oven to 375F. In a large bowl, combine the flour, baking soda, and salt.

In a separate large bowl, beat butter, sugars, and vanilla until smooth and creamy.

Add eggs one-at-a-time until well combined.

Add the dry ingredients to wet ingredients in 3 parts until well-combined.

Add the mini eggs to the dough and gently stir with a spatula until they're mixed.

Drop spoonfuls of the dough onto a parchment-lined baking sheet.

Bake for 8 to 10 minutes or until edges of the cookies are golden.
