Homemade Strawberry Turnovers
Sometimes when I try out new recipes, they don't turn out as I expect and they turn into something different. While attempting to make homemade pop-tarts (I'm gonna try another recipe), I ended up making strawberry turnovers that were amazing.
That's one of the magical things about cooking or baking, you start off wanting to make one thing, and end up making another, equally delicious treat.
Makes 4 or 5 pastries
1 box of puff pastry
2 cups of strawberries, quartered
2 1/2 tsp honey
1/2 cup white sugar
1 egg, beaten
To make the filling, place strawberries, granulated sugar, and honey in a medium saucepan. Mash the berries as best possible and simmer for 45 minutes, stirring often.
Preheat oven to 425F. Cut puff pastry into rectangles or squares remembering that you need 2 rectangles per turnover.
With the beaten egg, brush around the edges of your puff pastry rectangles.
Once the filling is ready, spoon about 1 tbsp of filling into the centre of half of the pastries.
With the egg brushed sides facing each other, place a pastry rectangle/square on top of each strawberried pastry. Seal the sides by clamping them together with a fork.
Bake for 10-15 minutes depending on the size of the turnovers. They should be golden brown when done.
