Lasagna is one of the best kinds of comfort food. Between all the cheese and pasta, I turn slightly Italian whenever I eat or make it.
My mom has been making this recipe for ages, but my own documentation and attempt at making it came after an inspiration from my boyfriend and his family. For his birthday, his mom wanted to make lasagna from scratch, so I told her we could make my mom's version. A really great thing about this recipe is that very easy to make, and a great way to spend time with loved ones on a Sunday.
Makes: 2-3 trays of lasagna
1lb ground beef
1lbs ground pork
1 large onion
4 garlic cloves
1 tub of ricotta
1 tub of cottage cheese
3 680mL cans of tomato sauce
2 packages of oven-ready lasagna noodles
LOTS of mozzarella
Preheat oven to 375F.
Put olive oil in a pan or pot. Chop onion and add along with garlic cloves; cook until browned.
Add beef and pork; cook until browned. Once cooked, add Italian seasoning. Set aside.
Combine cottage cheese, ricotta, and eggs together in a bowl. Once combined, add salt and set aside.
Open all the tomato cans and add salt, pepper, and Italian spice.
For the assembly: add tomato to the bottom of the pan, then the pasta. Next, layer tomatoes, meat, cheese combination, mozzarella, pasta, tomatoes, meat, cheese combination, mozzarella, pasta, tomato, cheese.
Cover the pan with aluminum foil or a pan cover. Cook for an hour or until all the cheese on top has melted.
Let the pan set for half an hour so the lasagna doesn’t fall apart when you serve it.
