No-Bake Easter Nests
For today's Easter treat, I'm sharing a cute nest that's easy to make and will make the perfect little snack to leave out for all your Easter bunnies.
This recipe makes 12 cupcake-sized nests plus I was able to make about 10 mini cupcake-sized nests. So whether your guests (or you) are looking for a full-sized or mini-sized treat, these will definitely satisfy that craving.
4 cups marshmallows (I used mini marshmallows)
5 cups crispy rice cereal
1/4 cup coconut oil, melted
2 tsp vanilla
2 cups mini eggs
Grease a 12-cup muffin tray and set aside.
Place the marshmallows in a large microwave-safe bowl and heat for 25-30 seconds. Stir well, and repeat as needed until melted.
Add the melted coconut oil and vanilla extract to the marshmallow and stir well to incorporate.
Add the rice cereal one cup at a time, gently folding it into the marshmallow mixture until all the cereal is mixed in.
Scoop around 1/4 cup portions into the prepared muffin tin. Wet hands and press the rice crispy cereal into a cup or tart shape. Place in the fridge for 2 hours or overnight to set.
Once set and hardened, pop nests out of the tray and fill with mini eggs to make a cute nest.
